I had been excited about today's lunch since last night - pork beans, macaroni salad, and cocoa bread. Yum.
The pork beans was a soup-ish dish (tomato-based) which had regular beans plus edamame, potato, bits of pork, onion, and carrot. The salad was some twisty pasta along with the boiled spinach, cucumber, and carrots which we dressed with mayonnaise. Since there were a couple of people out today, there was lots of extra in the staff room and I actually had, like, double salad and a pile of veggies and pork on top of my soup, so I skipped the bread today. I brought it home instead so I can just have it with breakfast.
Seriously though, this is one of my favorite lunches.
