Elementary School Lunch: 05/01 - start fresh

The first lunch of May featured a Chinese main dish, some soup on the side, and a heap of rice. It doesn't look like much, but as usual, it was more filling than anticipated.

I didn't catch the name of the main dish, but the key components were eggs and pork. The soup itself was the usual miso, but with tons of veggies in it. Nothing too special to report here today, though I'm happy to note that I had a chat with my principal and the nutritionist during lunch time. I asked if I could help plan a Cuban meal for the school sometime this year, and I got a "yes!" It'd be sometime after summer break, and I need to do the leg-work with the recipes, but I'm thrilled that they're willing to let me share my soul food with the students and staff in the form of our daily lunch. Now I just have to decide what'll be cheap and easy to make based on the availability of ingredients here.
